Best no-bake cookies

I’m a serious baker. I bake nearly every day. A few years ago I had a kitchen appliance nightmare and was left with no oven. What resulted was several days of no-bake cookie recipes coming in and out of my kitchen. Most recipes contained chocolate and peanut butter, and oats, all handy ingredients that would be simple to bake, yet make me feel like I was “baking.”

I played with a few chocolate recipes to come up with delicious cookies. And to this day – working oven and all – these cookies have become a staple in our household.

These are easy to make and stay for days in the refrigerator (the Drops are even better after a couple days!). Enjoy.

Chocolate-Coconut Drops

Ingredients
1/4 cup honey
1/4 cup cocoa
1/3 cup coconut oil (or butter)
1/4 cup milk (or replacer)
1 1/2 cups oats
1/4 cup peanut butter
1/4 cup shredded coconut

Directions

Using a medium saucepan, combine the honey, cocoa, coconut oil and milk over medium heat. Bring to a boil, and let roll for approximately one minute. Remove the saucepan from heat. Stir in peanut butter, oatmeal and shredded coconut. Place spoonful of dough onto wax paper and flatten slightly. Place in refrigerator or freezer for at least 2-3 hours to firm, or refrigerate overnight. Keep cookies stored in the refrigerator when not being eaten!

Oat-Chocolate Squares

Ingredients
3/4 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 1/2 cups oats
1/2 cup flaxseed
1 cup chocolate chips
1/2 cup peanut butter

Directions
Using a large saucepan, melt butter over medium heat. Add the sugar and vanilla, and mix in the oats and flaxseed. Cook for 2 to 3 minutes over low heat, until well blended. Place half of the mixture into a greased 8×8 pan and press down to form a layer. Melt the chocolate and peanut butter in a small saucepan over low heat, stirring until smooth. Pour the mixture over the crust. Crumble and top with the rest of the oat mixture, pressing gently. Cover, and refrigerate 2 to 3 hours or overnight. Cut into squares.
