The Duckling: Mallard Ice Cream opens stand at Cordata co-op

BELLINGHAM – Mallard Ice Cream announced the opening a food truck ice cream stand as its second location in Bellingham. Unofficially dubbed “The Duckling,” the 14-foot ice cream stand is located outside the Community Food Co-op Cordata store. The ice cream stand is the only outlet for customers to try new handmade ice cream sandwiches, inspired by the skills of staff baker, Veronica Spaulding. “Ice cream sandwiches are a playful and fun way to add a whole new texture to the extraordinary experience of Mallard flavors,” said Spaulding. “We’ve been experimenting with making all the confections for the ice cream flavors in house, including cookies, brownies and toffee brittles.” The Ice Cream Stand will serve eight to 10 rotating seasonal flavors of ice cream, and the new ice cream cookie sandwiches. The Railroad Street store in downtown Bellingham continues to scoop 28 flavors at a time. “We aim to make our all our treats from high quality whole food and we retain ripe flavors and freshness by processing the ingredients ourselves,” owner Ben Scholtz said. The new Cordata Ice Cream Stand is located at 315 Westerly Road and open daily from 11:30 a.m. to 6:30 p.m. The downtown store is open daily from 10:30 a.m. to 11:30 p.m. at  1323 Railroad Ave. For more information, visit mallardicecream.com.
