Bread Lab expanding into larger space

MOUNT VERNON – The Bread Lab at the Washington State University-Mount Vernon Research Center is expanding into a 12,000-square-foot building at the Port of Skagit County, and raising $300,000 for the relocation, renovation and equipment. The lab, currently housed in a 600-square-foot space at the Research Center, studies the diversity of locally grown grains to determine those most suitable for craft baking, malting, brewing, and other uses. The new location will provide more space for grain research by including a brewing and distilling lab, increasing classroom space and class offerings, and developing a professional kitchen for visiting chefs, bakers, farmers, millers and others.
